Happy first week of fall! I’m in a fall mood around here because of the chilly rainy weather this week. I don’t know about you, but I’m all about baking and cooking comfort food. Agreed? Pumpkin Banana Bread
This pumpkin banana bread is my favorite thing to bake during the fall months. We’re obviously big fans of traditional banana bread, but the addition of pumpkin is a real winner. Add some cinnamon sugar on top and you’re good to go.
Fall Charcuterie Board
Cory and I love to make a charcuterie board for happy hour or a light dinner. This fall charcuterie board is perfect for entertaining, and features all the best fall items like pumpkin crackers and merlot cheese.
Vegetarian Chili with Quinoa
Chili season is in full swing! I love making this vegetarian chili with quinoa on game days or on a chilly fall day. This chili is loaded with veggies and black beans, and pairs perfectly with cornbread.
Minestrone Soup
You can’t go wrong with this minestrone soup on a cold day. With lots of veggies and delicious noodles I love this soup with some baguette bread for dinner.
Veggie & Black Bean Enchiladas
My family LOVES these enchiladas for an easy weeknight meal. Since I’m a vegetarian we stuff these enchiladas with vegetables, black beans and cheese. These enchiladas taste so good for a cozy fall evening!
Scotcharoos
These bars go by many different names, but we call them scotcharoos in our house. The mix of peanut butter and chocolate on top is my absolute favorite. Make these bars for game day this season!
Pumpkin Chocolate Chip Cookies
These pumpkin chocolate chip cookies are a fun fall twist on traditional chocolate chip cookies. The addition of pumpkin make these cookies taste really good. Trust me!
Hot Toddy
On a cold fall evening I’m all about a hot toddy. This is one of our favorite fall cocktails to make at home.
