Hello summer! Summer hasn’t officially started, but I’m gearing up for lots of meals outdoors and trying some new recipes. With that in mind I also wanted to share some of my favorite go-to recipes during the summer months. Scroll down for my all-time favorite summer recipes! Also, leave a comment with your favorite summer recipes so I can give them a try.
My Favorite Summer Recipes
Key Lime Pie Bars
On a hot summer day you can’t go wrong with Key Lime Pie Bars for dessert. These bars are actually pretty easy to make, and definitely a crowd pleaser. You can also make this dessert the day before and keep it in your refrigerator.

Panzanella Salad with Peaches and Cornbread
I’m a huge fan of salads during the summer months. This Panzanella Salad combines fresh tomatoes, peaches, blue cheese and cornbread. I love to make this salad later in the summer when I can get local peaches and tomatoes from my garden.

Gazpacho
This Gazpacho is my favorite for lunch during the summer. I use fresh tomatoes from my garden to make this delicious cold soup. I’ll top the soup with some avocado and a drizzle of olive oil and I’m good to go. Trust me this soup is perfect for a hot summer day!

S’mores Board
Your kids are going to LOVE this s’mores board! I used a mix of fruits, different types of cookies/crackers, a variety of chocolate and of course some marshmallows to create this board. If you’re having friends or family over this s’mores board is so much fun for the summer!

Paloma Cocktail
Cheers to summer with this Paloma cocktail. I love anything grapefruit so this cocktail is perfect for me. When we make tacos during the summer months this is my go-to cocktail.

Caprese Salad
For a quick and easy lunch or a dinner starter I love to make a Caprese salad. This salad is very easy to make with only a few ingredients including basil, tomatoes and fresh mozzarella. With a drizzle of olive oil, balsamic vinegar and some fresh pepper you’ve got a delicious salad.

Hugo Spritz
If you love an Aperol Spritz (which is one of my favorites) you have to try this Hugo Spritz. I love how refreshing this cocktail is on a hot day. Cheers!
